If quail are frozen thaw overnight in refrigerator. Split the quail in half down back, and rinse birds
thoroughly under cold running water. Salt and dust quail with flour. Brown these halves in margarine in a large skillet. Place quail in casserole dish and pour
margarine from pan over the birds.
Add mushrooms and parsley. Pour enough wine in casserole to half cover birds. Cover casserole and bake at 350 degrees for one hour.
