Snapper with Salsa

Cook Time: 20 Minutes

Ingredients:

3 pounds snapper fillets
juice of 3 limes (or lemons)
2 cups fresh pineapple (minced)
1 Tablespoons vegetable oil
1 large sweet onion (minced)
1 green bell pepper (minced)
1 yellow bell pepper (minced)
1 jalapeņo pepper (minced)
1/2 cup fresh cilantro (minced)
1/2 cup whole kernel corn


In a bowl, mix cilantro, peppers, onion, corn and pineapple. Cover and chill. Combine oil and lime juice. On an oiled grill, grill the snapper 5-8 minutes per side, basting with lime juice mixture. When fish flakes easily with fork it's done. Place on dinner plates and spoon salsa over fillets.
