Broiled Grouse

Cook Time: 35 Minutes

Ingredients:

2 grouse
4 slices bacon
2 Tablespoons cooking oil
1/2 Teaspoon salt
1/8 Teaspoon black pepper
1/8 teaspoon orange peel
1/8 teaspoon paprika


If the grouse are frozen thaw overnight in refrigerator. Split the birds in half down the back, and rinse them thoroughly under cold running water. Rub them down on both sides with oil, salt and pepper.

Next, place the grouse breast side down on a large broiler pan and sprinkle with half of the orange peel and paprika. Place the pan 6 or 7 inches under a preheated broiler and let them cook for fifteen minutes.
After the 15 minutes have passed turn each piece breast side up and drape each with a bacon strip. Sprinkle with remaining orange peel and paprika. Place back in oven and continue to broil until bacon becomes well done. Cut thickest part of breast to ensure it is fully cooked.
