Summertime Grilled Fish

Favorite fish fillets
1-2 sticks butter
1 cup milk (or buttermilk)
2 cups water (added to milk to cover fish in bowl)
salt
pepper
seasonings of choice
 


Instructions:

Take fish fillets and soak in milk, water, butter mix. You can do this all night or five minutes before cooking, it works both ways. (Be sure to save enough butter to put in bottom of baking pan). Melt other butter in baking pan on the grill (cast Iron works well). Place fillets in pan on grill, medium to high heat for about seven minutes or until fish is ghost white. (Watch it!! It won't take long!!).

Salt and pepper to taste.

Tips:
Serve fish hot out of the pan with butter dripping!
Other spices like lemon pepper work well.
When you put the fillets in the pan to cook, make sure the butter comes up to the sides of the fillet. Covering them is even better!
Small fillets work best. Cut into chunks in order to get palm size fillets. Stay away from the thick stuff.
Not for the butter-shy!!
Sure beats the ol' burger!!
