Baked Yellow Summer Squash

 

This is one of my favorite yellow squash recipes and it is really easy to make. Besides tasting great, all of the main ingredients come from our garden.



1 Medium Yellow Squash, per 2 people
1/4 Red Onion per Squash
2 Garlic Chive per Squash
1/4 Stick Butter
2 TBS Olive Oil
Salt to taste

1/2 cup Panko Bread Crumbs
1/2 cup Parmesan Cheese

   


1) Slice the Squash in uniform 1/8" to 1/4" thick slices

2) Cut the onion into 1/4 " thick slices.

3) Cut the chives into 1/8" pieces.

4) Layer the onion and chives between pieces of squash. Drizzle each layer with butter and olive oil.

5) Add a light sprinkle of salt and pepper (if desired).

6) Sprinkle the top with bread crumbs. And, top the bread crumbs with cheese.

7) Cover with foil and bake for 30 minutes.

8) Remove foil and bake 5 additional minutes to brown top.
